Chickpea & Sundried Tomato Salad<br />- 1 x can of chickpeas, washed and mixed with paprika, garlic powder, nutritional yeast and olive oil<br />- sundried tomato halves (as desired), fried and chopped<br />- 1 x head of baby cos lettuce, chopped<br />- handful of spinach<br />- served with cashew parmesan<br />DRESSING:<br />- 1 tbsp vegan aioli<br />- 1 tbsp mustard<br />- splash of cashew mylk<br />- juice of 1/2 lemon<br /><br />2. Sweet Potato Nachos<br />- 1 x large sweet potato, chopped into discs and roasted<br />Guacamole:<br />- 1 x avocado, mashed<br />- handful of spring onion, chopped<br />- juice of 1/2 lemon<br />Black Beans:<br />- 1 x can of black beans, fried with olive oil, paprika and garlic powder<br />Cashew Sour Cream:<br />- handful of raw cashews<br />- sprinkle of nutritional yeast<br />- juice of 1/2 lemon<br />- 1 x clove of garlic<br />- water to desired consistency<br />- handful of raw almonds<br />(All served with sesame seeds)<br /><br />3. Sweet Potato Gnocchi<br />- 2 x large sweet potatoes, roasted and skinned<br />- 2 cups of gluten free flour<br />- 2 x handfuls of sundried tomatoes + the oil they come in<br />- cashew parmesan to serve<br /><br />4. Easy Stir Fry<br />- Frozen green veg (as desired)<br />- Soy sauce (as desired)<br />- 1 x tbsp of sesame seeds<br />- 1 x tbsp of flax seeds<br />- 1 x tbsp of sunflower seeds<br />- 1 x pack of vermicelli rice noodles<br /><br />5. Throw-Together Dinner (to take to work)<br />- 1 x sweet potato, roasted with olive oil and cashew parmesan<br />- 1 x head of baby cos lettuce<br />- leftover creamy mustard dressing<br />- leftover roasted chickpeas<br />- 1/2 an avocado<br />- sesame seeds (as desired)<br /><br />6. Lentil Sausage Rolls<br />- 2 x cans of lentils, minced<br />- 1/4 cup of almond meal<br />- 2 tbsp flax meal<br />- spaghetti bolognese herbs (as desired)<br />- paprika (as desired)<br />- fresh garlic and olive oil (as desired)<br />- 3 x sheets of puff pastry<br /><br />7.
